  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For the Topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

For the Pie Crust:

  1. In a bowl, combine flour and salt. Add the cold, cubed butter, and mix until the mixture resembles coarse crumbs.
  2. Slowly add ice water, one tablespoon at a time, and mix until the dough comes together.
  3. Shape the dough into a disk, wrap it in plastic, and chill it in the refrigerator for at least 30 minutes.
  4. Roll out the dough on a floured surface and fit it into a 9-inch pie dish. Trim any excess dough and crimp the edges. Prick the bottom with a fork.
  5. Preheat the oven to 375°F (190°C). Bake the crust for 15-20 minutes or until it turns golden brown. Let it cool.

For the Filling:

  1. In a saucepan, whisk together the sugar, cornstarch, and salt. Gradually whisk in the milk.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil for one minute.
  3. In a separate bowl, beat the egg yolks. Gradually whisk about 1/4 of the hot mixture into the yolks. Return the yolk mixture to the saucepan and cook for another minute, stirring constantly.
  4. Remove from heat and stir in the butter and vanilla extract.
  5. Let the custard cool for a few minutes.
  6. Layer sliced bananas on the pie crust, then pour the custard over the bananas.

For the Topping:

  1. In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Spread the whipped cream over the custard.
  3. Chill the pie in the refrigerator for a few hours to set.
  4. Serve and enjoy your Classic Banana Cream Pie!
