I’d love to share a recipe for Birria Tacos with you! Birria is a traditional Mexican meat stew that originated in the state of Jalisco. It’s typically made with goat meat, but beef is a common substitute. Birria Tacos are made by filling tortillas with tender, flavorful meat that has been slow-cooked in a spicy, aromatic broth.
Here are the ingredients you’ll need:
For the Birria:
- 2 lbs beef chuck roast or brisket, trimmed of excess fat
- 1 onion, chopped
- 4 garlic cloves, minced
- 4 dried guajillo chiles, stemmed and seeded
- 2 dried ancho chiles, stemmed and seeded
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
For the Tacos:
- Corn tortillas
- Shredded cheese (optional)
- Chopped onions and cilantro, for garnish
- Lime wedges, for serving
Instructions:
- Preheat your oven to 350°F.
- In a large dutch oven or pot, heat some oil over medium-high heat. Add the beef and sear on all sides until browned. Remove from the pot and set aside.
- In the same pot, sauté the onions and garlic until they are soft and fragrant.
- Add the chiles to the pot and cook for a few minutes until they are slightly toasted.
- Add the beef broth, tomato paste, cumin, oregano, smoked paprika, salt, and pepper to the pot and stir well to combine.
- Return the beef to the pot and spoon the broth over the top. Cover the pot with a lid and bake in the oven for 3-4 hours, until the meat is tender and falls apart easily.
- Remove the beef from the pot and shred it with two forks.
- Strain the broth and reserve it for dipping your tacos later.
- Heat up some tortillas on a griddle or in the microwave.
- Assemble your tacos by adding some shredded beef to each tortilla, along with some shredded cheese (if using), chopped onions and cilantro. Serve with lime wedges on the side and a small bowl of the reserved broth for dipping.
