Delicious Mango Pie Recipe: A Sweet and Refreshing Dessert for Any Occasion

Here are the ingredients you’ll need:

For the crust:

  • 1 1/2 cups of all-purpose flour
  • 1/2 teaspoon of salt
  • 1/2 cup (1 stick) of unsalted butter, chilled and cut into small pieces
  • 3-4 tablespoons of ice water

For the filling:

  • 4-5 ripe mangoes, peeled and sliced
  • 1/2 cup of sugar
  • 1/4 cup of cornstarch
  • 1/4 cup of water
  • 1/4 cup of fresh lime juice
  • 2 tablespoons of unsalted butter, at room temperature

Instructions:

  1. To make the crust, combine the flour and salt in a large bowl. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  2. Add the ice water, one tablespoon at a time, and mix until the dough comes together. Form the dough into a ball and flatten into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Roll out the dough on a floured surface and place into a 9-inch pie dish. Trim the edges and prick the bottom with a fork.
  5. In a large saucepan, combine the sugar, cornstarch, water, and lime juice. Cook over medium heat, stirring constantly, until the mixture thickens and becomes translucent.
