Delicious Mango Pie Recipe: A Sweet and Refreshing Dessert for Any Occasion

For the crust:
- 1 1/2 cups of all-purpose flour
- 1/2 teaspoon of salt
- 1/2 cup (1 stick) of unsalted butter, chilled and cut into small pieces
- 3-4 tablespoons of ice water
For the filling:
- 4-5 ripe mangoes, peeled and sliced
- 1/2 cup of sugar
- 1/4 cup of cornstarch
- 1/4 cup of water
- 1/4 cup of fresh lime juice
- 2 tablespoons of unsalted butter, at room temperature
Instructions:
- To make the crust, combine the flour and salt in a large bowl. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add the ice water, one tablespoon at a time, and mix until the dough comes together. Form the dough into a ball and flatten into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface and place into a 9-inch pie dish. Trim the edges and prick the bottom with a fork.
- In a large saucepan, combine the sugar, cornstarch, water, and lime juice. Cook over medium heat, stirring constantly, until the mixture thickens and becomes translucent.
- Add the sliced mangoes to the saucepan and stir to coat. Cook for an additional 2-3 minutes until the mangoes are slightly softened.
- Pour the mango filling into the prepared pie crust and dot with butter.
- Bake for 40-45 minutes or until the crust is golden brown and the filling is bubbly.
- Let the pie cool completely before serving.
