Ingredients:
- 1 ham bone (with some meat still on it)
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup of dried lentils, rinsed and drained
- 6 cups of chicken or vegetable broth
- 1 bay leaf
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Chopped parsley, for garnish
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic to the pot and sauté for 5 minutes or until the onion is soft.
- Add the chopped carrots and celery to the pot and sauté for another 5 minutes.
- Add the ham bone (with some meat still on it), chicken or vegetable broth, bay leaf, thyme, salt, and black pepper to the pot and bring to a boil.
- Reduce the heat to low and simmer for 2-3 hours or until the ham meat is tender and falling off the bone.
- Remove the ham bone from the pot and shred any meat still on it.
- Add the shredded ham meat and the rinsed and drained lentils to the pot and simmer for another 30-40 minutes or until the lentils are tender.
- Serve the ham bone and lentil soup hot, garnished with chopped parsley.
