Keto Crockpot Beef Stroganoff

Ingredients:

  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 oz sliced mushrooms
  • 1 cup beef broth
  • 1/4 cup tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup sour cream
  • 2 tbsp chopped fresh parsley (optional)

Instructions:

  1. In a slow cooker, combine beef, onion, garlic, mushrooms, beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours, until beef is tender.
  3. Stir in sour cream until well combined.
  4. Serve the beef stroganoff over zucchini noodles or cauliflower rice and garnish with chopped parsley, if desired.
