Ingredients:
- 4 salmon fillets
- 1/4 cup pesto
- 2 garlic cloves, minced
- 1 pint cherry tomatoes
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- Line a baking dish with parchment paper.
- Spread the pesto over the top of each salmon fillet. Sprinkle minced garlic over the pesto.
- Place the salmon fillets in the baking dish.
- Arrange the cherry tomatoes around the salmon in the baking dish.
- Season with salt and pepper to taste.
- Bake for 12-15 minutes or until the salmon is cooked through and the tomatoes are tender and slightly blistered.
- Serve the baked salmon with pesto and tomatoes.
