Ingredients:
For the main dish:
- 4 salmon fillets
- 4 tablespoons butter, melted
- 4 garlic cloves, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
For the side dish:
- 1 pound broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together the melted butter, minced garlic, lemon juice, salt, and pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the garlic butter mixture over the salmon fillets.
- Roast the salmon in the oven for 12-15 minutes or until cooked through.
- While the salmon is cooking, toss the broccoli florets with olive oil, garlic powder, salt, and pepper. Spread the broccoli on a baking sheet and roast in the oven for 15-20 minutes or until tender and slightly browned.
- Serve the garlic butter salmon fillets with the roasted broccoli on the side.
