Flavorful and Easy Keto Dinner Recipe with Garlic Butter Salmon and Roasted Broccoli

Ingredients:

For the main dish:

  • 4 salmon fillets
  • 4 tablespoons butter, melted
  • 4 garlic cloves, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

For the side dish:

  • 1 pound broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together the melted butter, minced garlic, lemon juice, salt, and pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the garlic butter mixture over the salmon fillets.
  4. Roast the salmon in the oven for 12-15 minutes or until cooked through.
  5. While the salmon is cooking, toss the broccoli florets with olive oil, garlic powder, salt, and pepper. Spread the broccoli on a baking sheet and roast in the oven for 15-20 minutes or until tender and slightly browned.
  6. Serve the garlic butter salmon fillets with the roasted broccoli on the side.
