Ingredients:
For the main dish:
- 1 pound large shrimp, peeled and deveined
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1 tablespoon coconut oil
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 medium zucchinis, spiralized into noodles
- Fresh parsley, chopped (for garnish)
For the side dish:
- 1 head of cauliflower, chopped into florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the minced garlic, olive oil, coconut oil, paprika, salt, and pepper. Add the shrimp and toss to coat.
- Place the shrimp on a baking sheet and bake for 8-10 minutes or until pink and cooked through.
- While the shrimp is cooking, heat a large skillet over medium-high heat. Add the zucchini noodles and cook for 3-4 minutes or until slightly softened.
- In a separate baking dish, mix together the chopped cauliflower, olive oil, garlic powder, salt, and pepper. Bake for 20-25 minutes or until tender and lightly browned.
- Serve the garlic shrimp over the zucchini noodles, and garnish with fresh parsley. Serve the roasted cauliflower on the side.
