Healthy and Tasty Paleo Dinner Recipe with Garlic Shrimp and Roasted Cauliflower

Ingredients:

For the main dish:

  • 1 pound large shrimp, peeled and deveined
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 tablespoon coconut oil
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 medium zucchinis, spiralized into noodles
  • Fresh parsley, chopped (for garnish)

For the side dish:

  • 1 head of cauliflower, chopped into florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the minced garlic, olive oil, coconut oil, paprika, salt, and pepper. Add the shrimp and toss to coat.
  3. Place the shrimp on a baking sheet and bake for 8-10 minutes or until pink and cooked through.
  4. While the shrimp is cooking, heat a large skillet over medium-high heat. Add the zucchini noodles and cook for 3-4 minutes or until slightly softened.
  5. In a separate baking dish, mix together the chopped cauliflower, olive oil, garlic powder, salt, and pepper. Bake for 20-25 minutes or until tender and lightly browned.
  6. Serve the garlic shrimp over the zucchini noodles, and garnish with fresh parsley. Serve the roasted cauliflower on the side.
